Hot Sauce and Heat

What is the hottest chile pepper in the world?

Pepper X is currently recognized by Guinness World Records as the world’s hottest chile pepper, with a tested average heat of 2,693,000 Scoville Heat Units.

It was developed by Ed Currie of the PuckerButt Pepper Company, who also developed the previous record holder, the Carolina Reaper. Pepper X officially claimed the record in 2023.

Scoville ratings are tested averages. The heat of naturally grown peppers varies with genetics, growing conditions, ripeness and other factors.

What makes chile peppers hot?

Chile peppers get their heat from capsaicin. It is concentrated primarily in the placenta or pith—the pale tissue inside the pepper that holds the seeds.

The seeds do not produce most of the heat, although they can become coated with capsaicin from the surrounding tissue.

How does Chilly Chiles rate hot sauce heat?

We use a 1–11 heat scale based on how a sauce tastes and feels compared with the thousands of products we have carried and sampled since 1993.

It is a relative guide, not a direct conversion to Scoville Heat Units. Heat is personal, so tolerance, serving size and what you are eating with the sauce can all affect how hot it feels.

For a complete explanation, read Heat 101: The Basics of Heat & Hot Sauce.

What helps cool down hot-sauce burn?

Water does not dissolve capsaicin very effectively and may simply move it around your mouth.

Dairy products such as milk, yogurt or sour cream usually work better. Fatty foods, bread, rice, tortilla chips, sugar or honey may also help soften the burn.

Most importantly, start with a small amount. You can always add more sauce, but you cannot take it back once your mouth is on fire.

Packaging and the Environment

What kind of packing materials do you use?

We try to reduce waste and use recyclable or biodegradable packing materials wherever practical.

Our starch-based packing peanuts are biodegradable and dissolve in water. They may look a little like cheese puffs, but they are packing material—not snacks. Check your local recycling and waste guidelines when disposing of any packaging.
