This sauce is incredibly flavourful. It is very forward with the sweet smokey raisin flavour of ancho, followed by a very tangy vinegar foundation. After a few moments it builds with heat from the ghost peppers. I don't have a particularly high tolerance for heat and I found that this sauce wasn't too aggressive. It's not like the ghost-dominant sauces that can sometimes feel like needles searing your mouth. Instead, the ghost makes its presence known without being overbearing. This is just a beautifully balanced and flavourful masterpiece. This sauce really shines on pulled pork. The smoke and tanginess is just the perfect complement.
