Holding fast to their original base recipe which has Trinidadian roots, cauliflower is used as a base, creating a savoury, rich undertone. Cucumbers add freshness, red wine vinegar adds a nice touch of acidity while cilantro, oregano and parsley add fragrant, herbal notes. Pair with seafood, chicken, lamb, rice and vegetables.
