Dawson’s Sichuan Ghost Pepper Hot Sauce is most definitely one of my favourite Ghost Pepper hot sauces on the market today. It has a fragrant and pronounced flavour profile which will light up your palate! This sauce is made with the Bhut Jolokia, also known as the Ghost pepper, which is one of the hottest peppers in the world. Given that this pepper originates from the Assam region of India, it makes sense to complement its taste with other ingredients commonly found in various Asian cuisines. This sauce has a thick, soft texture that makes for easy pouring. It has surprisingly refreshing aroma with notes of citrus, garlic, and ginger. The ingredients in this sauce work so well together. Each element present complements the next, making for a high-quality, gourmet product. The vinegar adds a pungency and tang as it does in most sauces, while the extra virgin olive oil provides a bit of fruitiness while giving the sauce a silky consistency. The garlic provides a strong, spicy taste which makes this sauce more bold-flavoured overall. The Bhut Jolokia peppers are the only hot peppers that are in the sauce, and thus provide all the heat. Taste-wise, these peppers have an earthy, sweet chili flavour, marrying perfectly with the other ingredients in the sauce. The Sichuan peppercorns provide notes of lemon and a tingly numbing quality in the mouth. The lemon adds the refreshing citrus taste which greatly complements the taste of the peppercorns. The ginger truly completes the whole flavour profile of this sauce with its warmth and sweet zing and the sea salt adds just the right amount of saltiness to balance out with the acidity.
This is a very hot sauce given that each bottle contains up to 16 ghost peppers! In terms of heat I would give this sauce a 7 out of 10. I highly recommend this sauce to experienced chile heads and those who may not be as familiar with the heat of the ghost pepper but are willing to try. This Asian-inspired sauce is a great way to enjoy, in small amounts, an explosion of flavours that can be used in so many ways. Add this sauce sparingly to curries, fish marinades, mayo, stir fries, sandwiches, salads, eggs, ceviche, tofu, and more. Given that this is such a fresh-tasting sauce, it greatly complements all kinds of grilled or sautéed vegetables!
