   Fat Cat Surprisingly Mild Guajillo Ghost Hot Sauce is exactly that: surprisingly mild! At the same time, it has a ton of savoury flavour which, at least in my experience with the product, is wildly addictive. I had finished my bottle in a matter of days. That’s how much I enjoyed it! If you like the flavours of the southwest and don’t mind just a slight kick of heat, then I highly recommend this one to you!    It’s a robust sauce with a smoky, tangy, and savoury flavour profile. What sticks out the most to me are the smoky Guajillo peppers and the cumin. It really is a marriage made in heaven! Water gives the sauce a more liquid consistency and balances out the acidity and salinity while the vinegar acts as the classic preservative, adding a moderate tang. Guajillo peppers are the dried form of the Mirasol chile and they are among the most popular chile varieties in Mexican cuisine. They have a rich, fruity, and smoky flavour. They really are delicious! Sea salt does its job of seasoning the sauce while the cumin also makes a big impact with its spicy, earthy, and slightly nutty taste. Ghost peppers are very much in the background in terms of the heat and flavour they contribute. That’s essentially why this sauce has this name, there’s just a tiny hint of Ghost peppers! I did detect a little boost of heat in this sauce from these superhot chiles, but it was rather faint. The oregano is also noticeable upon tasting, though not quite as much as the cumin. In combination though they work amazingly together, given oregano’s earthy and pungent flavour.

   In terms of heat, I would give this one a 2 out of 10. Even with the added Ghost pepper, this sauce is rather mild, hence the name. It is indeed surprisingly mild given that whenever we see the word “Ghost” on a hot sauce bottle, we tend to expect a scorcher! I would say anyone would be able to enjoy this product. If you’re a fan of Mexican-style hot sauces and love a good smoky flavour, then this one is a MUST-TRY!

   Add some of this sauce to your favourite Mexican and Tex-Mex dishes like chili, tacos, fajitas, burritos, nachos, chimichangas, enchiladas, huevos rancheros, tamales, and more! It’s also delicious on any kind of breakfast too. I’ve enjoyed it with scrambled or fried eggs, omelets, avocado toast, baked beans, and breakfast sandwiches. It’s a great table sauce and given the milder heat and savoury flavours it offers, you can be adventurous and try it on pretty much anything you usually enjoy with hot sauce!
