Matouk's Trinidad Hot Sauce
A traditional fruit and mustard based West Indian hot sauce.
Ingredients: Water, Papaya, Mustard, Hot Pepper, Pimento Pepper, Cane Sugar, Vinegar, Modified Corn Starch, Salt, Spices, Onion, Garlic, Less than 0.1% Potassium Sorbate (added as a preservative), FD&C No 5.

You know what "stupid hot" is. It's when you taste something and it's just heat without any flavor. There's no nuance. There's no depth. It's just hot and that's all you taste. Well with the trend that chilis have taken in the past few years it's become a trend to deliver on the heat and see how much you can take. Personally I don't see the fun in that. Why order something that all yo8u can taste is the heat and you can't actually taste anything else?
Enter Matouk's Calypso sauce. Actually there are several others that Matouk's has made but this is the one I always come back to. It's an odd little sauce in that it's yellow. The color is from the mustard which gives it some of it's unique flavor. You get onions, pickled scotch bonnets as well. It comes on a little sweet at first, hits you with the heat that turns your mouth on fire and settles down to a nice pleasant burn. It's my go to sauce when I want something that's not too hot but is just enough to be right on the money.
It's not the hottest sauce I've had but it's definitely one that I come back to time and time again.
