I cooked a pork butt in this sauce in the sous vide cooker and while the meat was finishing in the oven, I made the liquid into a gravy. The result was superb. The meat had a smoky mustard taste which did not overwhelm the pork flavour. The gravy was excellent. I like the fact that the mustard and smoke flavours balance so well with the meat. If you want more of them, add mustard or liquid smoke to taste.
