Fiery Habanero, Tuna and Cheddar Bites

Makes 50 Appetizers

Ingredients

  • 1 can flaked white tuna, well-drained (170 g)
  • ½ cup finely minced celery
  • ½ cup finely minced onion
  • ¼ cup finely minced fresh coriander or parsley
  • 1 hardboiled egg, finely chopped
  • 1 tbsp Sinai Gourmet Habanero sauce (or to taste)
  • 2 teaspoons sweet smoked paprika powder
  • 3 cups grated sharp cheddar cheese (Reserve 1 cup for garnish)
  • 250 grams pastry dough (about the amount needed for a single-crust 9 inch pie) (Or use any type of ready-made pastry dough: pie crust dough, puff pastry dough, croissant dough, etc.)

Directions

  • Preheat oven to 375°F
  • Filling: In a bowl, mix together the tuna, celery, onion, coriander or parsley, egg, Sinai Gourmet Habanero sauce and smoked paprika until well combined, ensuring the hot sauce is evenly distributed. Stir in 2 cups grated cheddar cheese. Cover bowl and refrigerate filling while preparing the crust.
  • Crust: On a floured surface, thinly roll out pastry dough to about 1/16 inch (1/8 cm) thickness. Use a 2 ½ inch round cookie cutter to cut out approximately 50 circles, depending on thickness of dough. Place one dough circle in each of the cups of a mini-muffin pan, pressing dough gently into bottom and sides. Note: the dough will only come about halfway up the sides of the muffin cups. Spoon filling into cups, pressing down slightly. Garnish with grated cheddar. Bake 10 to 12 minutes or until crust is golden. Remove from oven and let pan cool for 5 minutes. Gently remove appetizers from pan onto cooling racks. Serve hot or cold.

Variations

  • Meat-based: Replace tuna with ½ to ¾ cup of any of the following: canned salmon; finely chopped cooked chicken or turkey; finely chopped ham; cooked ground beef, pork or lamb; cooked crumbled sausage meat (casings removed); or freshly prepared bacon bits.
  • Vegetarian: Replace tuna with ½ to ¾ cup of any of the following: finely minced red and green pepper; cooked peas and carrots; coarsely chopped cooked broccoli and cauliflower; or any other combination of your favourite vegetables.
