Secret Aardvark Drunken Jerk Marinade

   Secret Aardvark is a company out of Portland, Oregon. They are most known for their delicious Habanero Hot Sauce that was on the Hot Ones lineup for Season 4. The Drunken Jerk Marinade is savoury, intense, spiced, and salty. This intensity is mainly due to the fact that its main use is that of a marinade, and thus has a high concentration of flavour. Therefore, it’s not necessarily the kind of sauce you would douse on any dish. Given this flavour profile however, it opens up a lot of possibilities for trying out both traditional as well as fusion Caribbean dishes! You’ll see once I go through all of the ingredients how this bold sauce has been expertly crafted!

Soy sauce makes for a large portion of the liquid base, with its light umami and sweet flavour. Apple cider vinegar helps to preserve the sauce while adding a subtle tang into the mix. Green and yellow onion add a bit of sweetness and fresh flavour. Habanero chili pepper brings some heat which I’m sure many of you could handle! The rum is not all that noticeable, but it makes for a nice Caribbean touch and added depth! Canola and/or sunflower oil binds the sauce together. It’s not an oily sauce by any means though. Ginger root and garlic add some boldness and zing while the organic cane sugar adds a tad of sweetness, but not enough for it to be a sweet sauce overall. The secret herbs and spices are what complete the fragrant, savoury jerk flavour.

In terms of heat, I would give this one a 2 out of 10. It’s a tad milder than some of the more traditional jerk marinades available on the market, but for me, this isn’t a drawback. If I want to make my marinade with this sauce hotter, I would just add fresh chiles or some chile powder. There’s always a way to make it hotter! This makes it a sauce that shouldn’t overpower anything with an intense heat level or overpowering flavour. It’s very palatable and will definitely enhance almost anything you choose to marinade it with!

Use this product as, of course, a marinade for a variety of different foods. Add them to your chicken, pork, beef, lamb, seafood, and even veggie or tofu marinades for a savoury island-kick! Add some in all the classic Caribbean dishes as a drizzle or reduce the sauce to turn it into a delicious glaze for anything you’re grilling! Try it on all kinds of rice, roasted sweet potatoes, in soups, stews, with Jamaican patties, cassava, fried plantains, and more! You can of course add it to mayo or aioli for a tasty, spiced dip!

The toe was damn hot!!!

The toe of satan is friggin so hot. It's one thing to eat something hot and swallow it. The toe is 9 million scolville but you are sucking on it. Need I say more!!! Picture was for fun but that was about 20 mins after!!

Perfect if you like strong vinegar-y sauces.

So my partner loves this sauce, but she loves kimchi and all things vinegar/acid-y. So I'm giving this 4 stars based on her opinion.

The normal Hellfire Detroit is one of my favorite sauces of all time for reference; however Bourbon Habanero Ghost is too tart/acidy for my taste, its also considerably hotter (which is welcome for some but a difference to note), I'd say 40% hotter than normal hellfire.

Good flavour with lingering heat

This is a pretty darn hot sauce, but the underlying flavour is still noticeable. This is a good one to have in your collection for those liking a strong kick now and then.

Bought this set as a gift for my brother who collects hot sauce and he liked it a lot. The Chicago one works well with guacamole! While the Adobo loco packs a punch. 10/10 would purchase and try other stuff again! Also the packaging is great and it arrived in perfect condition.
