Kultivar Batch #12 – Ghost Pepper & Molasses is a ghost pepper sauce like no other. It’s simply delicious.  Each element of the flavour profile accompanies the taste of the ghost in one of the best ways possible. I would highly recommend to anyone who thinks they would enjoy a smoky, earthy, and bold sweetness with a medium-level kick! This combination is what makes it such a great product. The heat in this sauce, though not quite as elevated as most ghost hot sauces, is rich and well-rounded. If you’re a fan of jerk spice or unique ghost pepper sauces, this is a must-try! 

The cayenne peppers, with their warm bite, and ghost peppers, with their earthy-fruity flavour provide the heat in the sauce. The molasses, dates, and tomatoes add just the right amount of full-bodied, bold sweetness. The taste of the turmeric is not very noticeable in this sauce, but it’s pungency complements the other spices. The vinegar and lime juice make for a fresh, citrusy, but not too vinegary tang, with none of the flavours being overpowered. Coffee provides subtly bitter and earthy notes to complement the peppers, molasses, cinnamon and cardamom. These spices add sweetness and an herbal fragrance which I find very pleasant.

In terms of heat I would give this sauce a 4 out of 10. Beginner chile heads would most probably find it at least a 7 out of 10, but those just starting to get into ghost pepper based hot sauces shouldn’t find it too hot. As an experienced hot sauce connoisseur, I would say that this is quite mild for a ghost pepper sauce. This, to me, is a good thing because it makes for a more accessible sauce. It can be enjoyed by those who may like small amounts of ghost heat but would not be willing to go to the full-on ghost pepper mash or extract level of intense heat.

Enjoy Kultivar Batch #12 on pork chops, steak, tofu, fish, and more for a bold, smoky, and sweet kick! This sauce works great in seafood dishes. I’ve added it to sautéed shrimp and even glazed it on salmon! Try it in grilled cheese, tacos, soups, on wings, grilled chicken thighs, grilled veggies like zucchini, and even stews! Throw it into a noodle or rice stir fry for some extra piquancy! This sauce is also great as a dip for dumplings, French fries and more! Its flavours always shine through when mixed with sour cream, mayo, hummus, tahini, or simply olive oil and lemon juice for a zesty salad dressing!
