Falton Reaper Hot Sauce

   Established in 1993 as Canada’s first fiery food store, Chilly Chiles has been heating up the nation for over 25 years! As the hottest of the three-sauce lineup by Dawson’s Hot Sauce, Falton Reaper, in my opinion, stands out immensely as a reaper-based hot sauce. Made with only a handful of carefully selected ingredients, this product is fresh, all-natural, and is guaranteed to satisfy pretty much any chile head’s craving for a hot sauce with great flavour and intense heat. I’ll be boldly honest with you. Falton Reaper is easily in my top 5 favourite reaper-based sauces of all time. It’s THAT GOOD. It’s one of those sauces that I have a tablespoon of without even realizing it because I’m so addicted to the flavour… and then suddenly tears of joy emerge.

   The floral and fruity taste of the Carolina reaper paired with the smoky chipotle peppers makes for a marriage made in heaven! These are the peppers that bring all the heat to the sauce, with the mild-medium heat of the chipotles bringing down the heat of the reaper slightly. I have not found this pepper combination in that many sauces to date, and Dawson’s has clearly nailed it! The vinegar taste in this one is rather mild. That’s always a good thing because sometimes too much vinegar can overpower the other flavours in a sauce. I’m happy to say that issue is definitely not found in this one, or any of Dawson’s products! There’s just enough vinegar to preserve the sauce and add a bit of tang. Garlic, one of my favourite ingredients in hot sauces, adds a light zing to complement the peppers. Extra virgin olive oil adds a very subtle fruity quality and silky texture. High quality oil such as this is one of my favourite ingredients in any sauce with heat. It makes the consistency very pleasing for your palate…until the scorching heat kicks in of course! Brown sugar brings a nice touch of sweetness. I wouldn’t say this element of the product makes it a “sweet sauce” per se, but it does add a lightly sweet finish which goes perfectly with the flavour profiles of the chiles. Sweet and smoky? What’s not to love! Salt ensures that it’s seasoned to perfection…and that it is!

   In terms of heat, I would rank this sauce as a solid 8 out of 10. As a hot sauce consisting mainly of reapers, it definitely packs a good punch. The burn is slow, and you can expect the sweats, tears, and endorphins if you have just a little too much on your dish. Given this level of heat, I would recommend Falton Reaper mainly to chile heads who are at least comfortable with ghost pepper-based sauces. If you can handle habanero hot sauces but nothing above that, this may not be the right one for you unless you’re looking to seriously up your game. I’m sure many of you would be up for the challenge anyway. Just don’t say I didn’t warn ya!

Use it sparingly in your meat or seafood marinades, dips, sandwiches, nachos, chilis, curries, burgers, soups, stuffed peppers, salsas, pasta, wing sauces, and more. I like having it with my eggs in the morning, helps wake me up! Add it to your rice or noodle dishes too. A little goes a long way! Use your imagination!
