Clark + Hopkins Assam Hot Sauce

   Clark + Hopkins really is my most memorable discovery of the year thus far. I had always heard of them and seen their products on YouTube and Instagram, but I only had a chance to finally try the whole sauce lineup earlier this month. MAN have I been missing out!! As seen on past seasons of Hot Ones, Assam was one of the favourites of the guests on the show! To me, there’s no mystery as to why. It’s an expertly crafted product which, to me, stands out among the total of 60 or so hot sauces I have in my fridge currently. It’s THAT GOOD!

   The flavour profile is fragrant, savoury, mildly earthy, and moderately spicy. The rich spices combined with the hot peppers make for a deep flavour. It also has a thick consistency which I really like. Apple cider vinegar acts as a healthy preservative while also bringing a light tang into the mix. This product is not very vinegary at all, which is great! Tomatoes and onions add some sweetness and help make the sauce a bit thicker and helping it give that tikka-masala kind of taste! The garlic and ginger are quite noticeable, as they should be, given this is an Indian-inspired sauce! Water helps to balance out the consistency while 7-pot primo peppers and Ghost peppers bring a moderate, sweet, lightly floral and fruity heat. Tamarind, the classic ingredient which is a base for many Indian sauces and chutneys, adds some of its distinct sweetness and tartness, with the black mustard seed providing a lightly pungent, spicy flavour. Salt ensures a light level of seasoning while turbinado sugar adds just a tad of sweetness. There’s a perfect balance between the two! I’m sure the spices included in the mix contains some turmeric, cumin, ground coriander seeds, and more!

   In terms of heat, I would give this one a 6 out of 10. It’s got a decent amount of heat, but it is far from the scariest sauce made with any of these superhot peppers. I wouldn’t recommend it to those who can’t at least handle scotch bonnet or habanero-based hot sauces, but if you do, this one should be a breeze! If you’re an intermediate or hardcore chile head like myself, you probably won’t find any crazy heat from this one. At the same time however, these chiles can give a delayed burn, so on some occasions you may find that what you tried wasn’t very hot and then BOOM it hits you.

   Add Clark + Hopkins Assam to not only your favourite Indian and South Asian dishes, but also to your Mexican food, poke bowls, soups, fried fish, couscous, samosas, rice, veggies, avocado toast, and more. It’s also amazing mixed with mayo, hummus, tahini, or yoghurt! Seriously, it’s got so much flavour that it enhances almost any dish!

Brutal, very hot, taste was really bad

This was just stinking hot, tastes hotter than a lot of other sauces but the heat over powers you and it is not a great taste, was good for a hot wing challenge but I would use as recommended on the bottle to just add heat to something like soup or chili if you want some extreme heat, even then there are much better choices!

Not as crazy as I was expecting but many of my friends can barely handle it :)

It really burns, the heat kicks in and keeps going up when you breathe :)

I cried... I had hiccups..... but I was expecting it to be kicking my ass more.

No ring of fire :)
