CaJohns Hydra Hot Sauce

   CaJohns Hydra Hot Sauce is definitely a force to be reckoned with! Made with 7-Pot Primo chilies, it’s got a fresh heat that you’d expect to get from this brand. Hydra is in fact a very pepper-forward sauce, meaning that much of the flavour comes from the main pepper itself. There is not too much complexity in this sauce when it comes to flavour, but that is okay with me, because I know that I will be satisfied with the savoury taste of the super hot chili!

   CaJohns is actually a very reputable company. Not only have they made a big name for themselves as one of the first hot sauce brands to gain major popularity, I have in fact enjoyed dozens of their sauces in the past few years alone. I’ve also reviewed a number of other CaJohns products over the last while. Check them out if you are interested in learning about this brand! My other reviews include Serrano Lime Hot Sauce, Fire Cock Asian Hot Sauce, and Bourbon-Infused Chipotle Hot Sauce. They are all amazing products with such diverse flavours and are definitely worth checking out! 

   The flavour profile of this one is tangy, citrus, and mildly floral. 7-Pot Primo chilies bring all the heat, with a subtle fruity, citrus, and floral taste. It does have an outstanding flavour but keep in mind that, shortly after tasting, it will unleash PURE FIRE for many of you! Distilled vinegar preserves the ingredients with a mild level of tang, while cane sugar adds a slight amount of sweetness. To be honest, I found the sugar to be virtually unnoticeable. Sea salt adjusts the taste profile to ensure it has got a bit of salinity, while the garlic adds a little zing at the end. I am not quite sure which spices are included, as there was no strong indication for me when I tried it. My guess would be perhaps cumin, although your guess may be as good as mine. Lemon extract adds a light citrus touch, complementing the citrus flavour of the Primo chilies. 

   In terms of heat, this one earns a solid 8 out of 10. I would recommend Hydra ONLY for those of you who can handle some solid heat, and/or are looking for a challenge. It does have a great flavour so I would not say this one is only heat, which is why anyone who is just beginning to get into hot sauces and spicy food would not have the heat tolerance level to fully appreciate the subtle flavours this product has to offer. The secondary ingredients are, in fact, very much in the background. So, I would not hesitate to say this sauce could almost be called a puree with vinegar. All this to say, if you want a sauce which is hot and is very much focused on the natural heat of the chili, then this is a great pick!

   Add some Hydra, in modest quantities, to your meat or seafood marinades, spicy pasta dishes, stir fries, tacos, pizza, burrito bowl, as well as your favourite breakfast dishes including omelettes, scrambled eggs, bacon, sausages, baked beans, breakfast dishes, and more! I also recommend you add a few drops, or a teaspoon (if you are brave enough) to your mayo, hummus, or sour cream dips! I cannot guarantee that most of your dinner guests would appreciate it though! The possibilities of this sauce are pretty limitless, given that it is mainly pepper-based. The only thing to keep in mind is how hot it is. A little can go a long way!
