   CaJohn's Leviathan Hot Sauce is a one-of-a-kind product. As our website explains, this is not a sauce to put on top of your ice cream! Not only does it pack some good heat, it’s also made with a special combination of chocolate pepper varieties. This makes for a really enjoyable flavour. If you can REALLY handle the heat and are curious about the flavour I’ve mentioned, keep reading!    The flavour profile is pepper-forward, as these peppers have lots of good taste to bring to the table! This sauce is made up of Chocolate 7-Pot, Chocolate Bhut Jolokia, Chocolate Habanero, Chocolate Scotch bonnet and Trinidad Douglah peppers. These all bring on some serious heat, but also serious flavour. The taste of these chocolate varieties is different than their multi-coloured counterparts. They are generally sweeter and smokier tasting. Thus, this combination of peppers makes the sauce have notes which are lightly fruity, sweet, rich, and smoky. Distilled vinegar and apple cider vinegar preserve the sauce, while also making for a light, sour-sweet tang. The garlic powder is not all that noticeable, but in combination with the salt, it ensures that there’s a bit of seasoning in the mix. There is very little cane sugar in this one. It makes for a very subtle sweet finish, but there’s not enough for me to call this a sweet sauce. An example of a similar tasting but much sweeter sauce would be Funken Hot by Karma Sauce, given that its made with a decent amount of brown sugar. Lemon extract is an ingredient found in a few CaJohn’s products. It gives a bit of a citrusy aftertaste but is very light and hardly noticeable. The spices are a mystery, but I imagine them being a possible combination of Caribbean spices. Though upon tasting, it’s rather hard to tell.

   In terms of heat I would give this one a solid 8 out of 10. It’s got a pretty good burn, but I wouldn’t personally include it in my top 20 hottest non-extract hot sauces. For those seeking some strong heat with a unique flavour, this one is definitely for you. I would highly recommend it to hardcore chili heads like myself as well as those who can handle at least ghost pepper-level hot sauces. I wouldn’t recommend it for beginners given that it's the kind of sauce that someone with a lower tolerance couldn’t fully appreciate. With its complex flavour, someone with a higher tolerance for spice would be best equipped to enjoy it.

   Leviathan is more of a versatile sauce than you may think. Given the fact that it’s not fruit-based or very sweet, its flavour can blend with almost any kind of meal. Even though its heat level does not make it quite that accessible to all chili heads, when used modestly, it works in sweet, savoury, smoky, earthy, or complex-flavoured dishes. If you use the sauce in small amounts, it shouldn’t overpower most kinds of meals with the unique flavour of the peppers enhancing the other ingredients on your plate. Add a bit of Leviathan to your favourite seafood, pork, chicken, and beef marinades. I’ve also added it to my BBQ sauce for an added jolt of heat and subtle complex flavour. If you want to make spicy BBQ chicken wings or ribs, add some in your sauce before glazing! Try it in your stew, chili, salsa, guacamole, mayo dip, pulled pork sandwiches, rice and beans, Jamaican patties, stir fries, and more! There are many possibilities with this one!

The toe was damn hot!!!

The toe of satan is friggin so hot. It's one thing to eat something hot and swallow it. The toe is 9 million scolville but you are sucking on it. Need I say more!!! Picture was for fun but that was about 20 mins after!!

Perfect if you like strong vinegar-y sauces.

So my partner loves this sauce, but she loves kimchi and all things vinegar/acid-y. So I'm giving this 4 stars based on her opinion.

The normal Hellfire Detroit is one of my favorite sauces of all time for reference; however Bourbon Habanero Ghost is too tart/acidy for my taste, its also considerably hotter (which is welcome for some but a difference to note), I'd say 40% hotter than normal hellfire.

Good flavour with lingering heat

This is a pretty darn hot sauce, but the underlying flavour is still noticeable. This is a good one to have in your collection for those liking a strong kick now and then.

Bought this set as a gift for my brother who collects hot sauce and he liked it a lot. The Chicago one works well with guacamole! While the Adobo loco packs a punch. 10/10 would purchase and try other stuff again! Also the packaging is great and it arrived in perfect condition.
