Char Man Brand Verde Hot Sauce

   Char Man Brand, from Ojai, California, have made this incredible verde hot sauce. It won 2nd place at the 2017 Scovie Awards! I’m honestly not surprised. It’s a unique take on the classic verde: fresh, smoky, and savoury with a slow, mild simmering heat. I personally love verde sauces. They have such simple ingredients that pack lots of flavour once combined. I am totally hooked on this one by Char Man. During my hot sauce tasting parties at my place, in which me and my friends try my 50+ hot sauces in my fridge, this sauce has consistently stood out as one of the favourites of many of my friends. They tend to comment on its freshness, garlicky zing, and citrusy tang. It’s all natural and preservative-free. I will say, the aroma of this sauce is amazing. You’ll notice the scent the first time you open the bottle. It instantly makes one think of tacos, nachos, rice & bean dishes, and so much more. If you come by the store, I’m sure most of you will be sold on it already just by getting the initial aroma!

   Have a look at the other two sauces in the Char Man product lineup seeing as we have them here at Chilly Chiles online and in-store! They are the Original and Caribbean. They are also delicious and worth looking into!

   This sauce has all the ingredients one would expect from a verde, but with a twist. A blend of four different chiles bring all the heat and fresh flavour that make this sauce so tasty. They are fire-roasted guero, jalapenos, serranos, and Thai chiles. This makes for a crisp, floral, and smoky taste which is simply fantastic. Water is a typical ingredient given that it helps the sauce reach a certain consistency and pretty much all verde sauces are traditionally more liquid than other, more thick hot sauces. Sugar adds a bit more sweetness, but not too much. It’s a kind of light sweetness that you only notice towards the end upon tasting. Fresh garlic and onions add a sweet zing which add some body and boldness to the flavour profile. Vinegar provides the light tang and pungency one would expect, while the lemon juice adds a citrusy sourness. The spices are not indicated, but I can imagine the mix includes traditional Mexican spices like cumin. Xanthan gum, a thickening agent found in many hot sauces on the market, makes the sauce reach the desired consistency. Along with the spices, salt ensures that it’s well-seasoned.

   In terms of heat I would give this one a 3 out of 10. It’s a mild one, making it accessible to pretty much anyone who loves hot sauces and spicy food. Given that it has a mix of different peppers, it has a bit more heat than your regular supermarket verde, thus, even experienced chile heads should be able to detect a light heat. I would recommend this one for those who can handle at least mild hot sauces and I’m sure that most beginner chile heads and experts alike will appreciate the flavour that it has to offer. The only people I wouldn’t recommend it to are those who don’t like hot sauce. Let’s be honest though, you probably wouldn’t be reading this right now if you weren’t into hot sauces to a certain extent!

   Use it how you would use any other verde salsa: as a dip, topping sauce, or part of a marinade! Add it to your beef, chicken, pork, or fish tacos, guacamole, rice & beans, quesadillas, burritos, nachos, and other Mexican and Tex-Mex favourites! Try it on a baked potato with cheese, pork tenderloin, salads, scallops, chicken, soups, on a cheeseburger, veggie burger, cheesy stuffed peppers, or oven-roasted sweet potatoes! Drizzle it on eggs, hash browns, in breakfast sandwiches, avocado toast, and trout or salmon! It honestly adds flavour and complements almost everything you put it on!

Horrible after taste

This sauce gets two stars from me due to the horrible after taste but contains a crazy amount of heat. It feels hotter than some other sauces I have that are rated much higher in scovilles. I only bought this due to the "hot ones" show to see what the fuss was about. I think it was a mistake to add "natural pepper flavoring", tomato paste and some wrong spices that contribute to an icky after taste (not talking about heat).


I stayed away from this sauce for a while but after watching "hot ones" my curiosity was peaked. I didn't find it as hot as some of the others that were rated lower in scoville units in their show line up. For the level of heat, I echo the comments already made. The makers of this sauce did an incredible job balancing heat with sharp flavors such as sun dried tomatoes needed to poke through. Love this sauce.

OMG The ingredients

The stuff they squeeze into this little bottle, likely why it costs a lot more. I agree with the others that this isn't super crazy hot given the types of peppers used. The makers did a good job mixing it all together in the right combination. This goes great with wild game meats, thanksgiving and other festive turkey meals. But i don't really think there's anything this hot sauce doesn't taste good with.


My head tolerance is a bit low but this sauce is absolutely perfect. Perhaps not as hot as the heat scale given in the product description though. This sauce won with over with a disclaimer that the sour cherry may contain pits. That's awesome and screams no fake simulated cherry powered in this sauce. Will be buying this again.

Disguisting and disapointing.

I'm not a hot sauce expert but my taste buds hate this rub. For a long time, I've been looking for a cherry power spice. I tried to make my own using dollar store simulated cherry powder and this Mary's product is far worse. Imagine a no name cherry coke, add a ton more sugar, a while the smoke tries to overpower the similar tart cherry flavor that actually gives me a headache. To their credit, if real dehydrated cherry powder was used, they would likely have to charge around $30/shaker. I would pay this if they added some heat to this... otherwise cook your stuff in dr. pepper or cherry coke and save money. Won't be buying this again.
