Bigfat’s 208 Bajan Style Hot Sauce

October 19, 2019

Bigfat’s 208 Bajan Style Hot Sauce is fresh, flavourful, and addictive. I figured I would quote our product description on the website, as I find it best captures what Bajan is and what you can expect from a sauce like this: “Bajan food culture has its roots in African, Creole, and Irish cooking, something this hot sauce succeeds in showcasing with its savoury profile. Warm and sultry like a Caribbean sunset, it pairs well with pork, chicken, and all types of seafood.” I find all of that to be very true. I’ve enjoyed this product in all of those ways and more. I find it really is a rarity to find these kinds of flavours in a hot sauce. Similar mustard-based island sauces, though gaining popularity I believe, are not always that easy to come by. This one is a GREAT choice if that’s the kind of flavour you’re looking for, or if you’re simply curious!

I’ve also written a review for Bigfat’s 308 Garlic Ginger Hot Sauce. Check it out if you want to learn more about other products by Bigfat’s! It’s by far the freshest-tasting garlic and ginger combination I have ever had in a hot sauce. The stuff is legit!

The flavour profile of Bigfat’s 208 Bajan Style Hot Sauce is tangy, savoury, sweet, and zingy. Water balances out the consistency as well as the acidity of the product, while the onions and carrots add some of that sweet, island flair. Yellow mustard is the main flavour driver of the sauce. Its spicy notes and tanginess work so well with the vegetables and overall vibrancy of the product. Habaneros add a very modest heat and slightly citrusy taste. Garlic plays an important role in the sauce, bringing out a light zingy kick at the end upon tasting. Vinegar as well as Ascorbic acid (Vitamin C) naturally preserve the product, while adding a noticeable tang. The sea salt helps to ensure that the sauce is well-seasoned and is the furthest thing from bland!

In terms of heat I would give this one a 2 out of 10. I am confident in saying everyone should be able to handle the mild heat. Connoisseurs, curious beginners, and regular Joes alike should find this an enjoyable sauce! The only thing really is that you have to be a fan of mustard, because its taste plays a central role in this product. If you like mustard, and even better: if you’re a fan of Caribbean food, you’ll most definitely fall in love with Bigfat’s 208!

Add some Bajan spice to your grilled meats, marinades, roasted veggies, seafood like fried snapper, shrimp and sea bass, oven-roasted potatoes, salad dressings, rice dishes, slow-cooked pork, sandwiches, rotisserie chicken, stews, wings, steak, oxtail, soups, and more! Try it with almost any Caribbean or island-inspired dish! The taste will surely complement all kinds of flavours!

Come by one of our store locations and give Bigfat’s 208 Bajan Style Hot Sauce a try!

As always, Keep it spicy!

CaJohns Hydra Hot Sauce

February 11, 2020

CaJohns Hydra Hot Sauce is definitely a force to be reckoned with! Made with 7-Pot Primo chilies, it’s got a fresh heat that you’d expect to get from this brand. Hydra is in fact a very pepper-forward sauce, meaning that much of the flavour comes from the main pepper itself.

It's in my fridge, taunting me right now

- This is the Buckley's Mixture of hot sauce, because it tastes awful and it works.
- It is a brutish thug with a roll of quarters and father issues.
- It is what happens when someone moves from hurting animals to torturing humans for sport.
- Used nefariously, it may actually contravene the Geneva Protocol.
- I'm glad I tried it - and depending on whether I suffer from dissociative amnesia, I may reach back into the fridge....
- Great customer service - see attached pic!
